It has a pretty complicated jailbreak (hacking) process for the newest version, but there's some simple tutorials out there.
Jailbreaking is basically removing limits on the iPod or iPhone so that you can put third-party stuff on your iPod (such as games).
I love my iTouch, it will be the new smartphone in the future. There's an app that allows you to make phone calls over WiFi, you just need to buy a microphone.
Anything else, you can probably do with the jailbreak.
If you have $300 and nothing to waste it on, go buy a Touch.
Edit: Read some more from this topic, and here's a gather-up of why iPhone is almost obsolete.
The iTouch is less expensive, seeing that apple likes to stick fat price tags on its stuff.
The iTouch has the exact same things that you can do on the iPhone, except texting and the Phone, but wait!
The iTouch now has an app that allows you to make Phone calls, over WiFi! No texting yet though, but someone will think of something.
The iTouch community has gathered a rumor that the price will be lowered soon on all its models. End of February should tell for sure.
etc...
The iPhone is only better in that it has a cell phone feature. Hence the phone. But think about it, would you get an iPhone and pay at least $60 a month for phone service, or would you buy a regular phone and pay a lot less, and use your touch for everything else? The iTouch is a 1-time fee. The iPhone drags you down.
Unless you unlock it.

I would strongly recommend that you wait until at least the second generation lifecycle of both the iPod touch and iPhone before seriously considering purchasing one. History dictates that first gen Apple products leaves more to be desired.
Truth be told, both the iPod and iPhone are mediocre when it comes to features and value. There are better (and usually cheaper) alternatives to them. Back in high school, I would be able to tell you those, but I don't keep up much with those anymore. User friendly interface and perhaps a sleek design are the only things Apple have going for them.

You are also right about Apple's constant updates of iPods. They show a September-ish trend going on. So whatever's in store will have to wait until September.
