Hopefully, if I get an internship on career day, I was wondering if that internship counts towards the volunteer hours required for our tech diploma?
Also, speaking of career day, do they have a lot of internship opportunities in business?

It depends if it is a paid internship or not. At the end of your internship you can ask your supervisor for a letter confirming how many hours you have completed for service.
And there are a large amount of alumni in the business field so don't worry there will be people.
