Each guidance counselor is required to meet with each one of their students at least once a year.
Meetings do not take long unless you have specific questions concerning your courses and development. At most they take 10 minutes. They are also during your lunch period so you don't have to skip class and miss important information / the lesson for the day. And yes, you will have time to grab lunch.

I visited at least once. Do they actually track who visited or not?

Yes. Which is why there is a sign in sheet.
In addition, the more you visit your counselor, the more they will KNOW you, and know you well - which yields a more solidified college recommendation when the time comes. Instead of giving you a generic recommendation like "Sally is a great contributor to the community because she volunteers" they can write "Sally is an asset to the greater community by being one of the few teens to raise over $1000 for the March of Dimes fundraiser. This not only proves her leadership, but her ability to help those in need." See where I'm going with this?
Unfortunately, you will have to make an effort to get to know your counselor and touch base with them once in a while since Tech is so big. When you have a conversation with them, make sure they know who you are lol. Talk to them! Update them if you're volunteering at a new place, tell them your experiences, make them aware of who you are! I would also suggest that you email or visit their office ahead of time to schedule an appointment so you and your GC can block off the time you both can need!
