I have a few questions about health. How often does the class meet? Is it single period or double? Is it factored into your average or not?

You have Health either your first or second semester (it replaces gym), and you meet around... 4/5 of the week? I can't quite remember, but you meet quite often.
It's a single period and it does count towards your average.

Every day, you would have a math class, Sophomore English, a Foreign Language class, a Social Studies class (Global 3 and 4, AP World History, or AP European), a Science class (usually Chemistry), Lunch, a lab class (once a week), and either Gym, or Health (both four times a week).
"...But more important than resources to use and places to live is the realization that a species whose DNA resides on only one planet is destined to become extinct. Exploration of the space frontier is ultimately about survival of the human species. If the dinosaurs had explored space, if they had colonized other planets, they would still be alive today." - Donald Pettit

If you are lucky; during the semester that you don't have health, you might have gym every other day :D (I did...)

Is it better to have health in the fall or spring (in your opinion?)

It really doesn't matter whether you have it in the fall or spring.

Personally I'd say spring just so you don't have a hellish time during PE in the summer, specially the last marking period.

I'd say the Fall. You're going to be sweating no matter what, you might as well be moving around and having fun while you sweat, unless you get stuck with outdoor track in the last marking period, as I did.

There's always at least 2 mini-clusters from what I know. It's because we had the same teacher so we alternate to have gym every other day.
